I heart fall! This is my favorite time of year. I love the cool weather, the fall colors, sweaters, and celebrating two of the best holidays, Halloween and Thanksgiving. Of course the best part of fall is…PUMPKIN and recently discovered, HONEYCRISP APPLES!
Now I know one could make pumpkin stuff at any time throughout the year (thank you canned goods), but it just doesn’t taste the same. There is just something about fall that makes pumpkin so scrumptious! I’ve already enjoyed a few pumpkin spice lattes, a pumpkin bagel and just this week I made my own pumpkin cream cheese. Check out my breakfast this morning:
No way am I stopping at just that though! I’ve already found some recipes for pumpkin pancakes, pumpkin mac n cheese and some tasty pumpkin oatmeal. I’ve never made a pie before and figured attempting to make a pumpkin pie would be a great one to try. And of course I’ll make my pumpkin bread and some cookies. I’m excited to try all kinds of different recipes, especially some that incorporate pumpkin in some dinner entrees. Any good recipe finds for pumpkin, send them my way!
A big thanks to my sister-in-law for introducing me to Honeycrisp apples! Where have these apples been all my life??? I’m usually a pretty picky apple eater, only really like a couple varieties, but I went out on a limb and tried these apples and they are SOOO delicious. I can’t get enough of them! Dave and I had them in Denver, transported a couple back with us and I was afraid that we wouldn’t be able to find any out east, but luckily I found them at Whole Foods (from a farm in PA). They are so good, I might have a bigger obsession with these apples than I do of pumpkin and I’m usually quite the pumpkin fanatic. They might just be the perfect apple – crisp, not too sweet, juicy – a must try if you haven’t already!
The marathon is only 16 days away! I’ve had some great runs this week and the funny thing is the 15 mile run planned for this weekend seems like cake (as I knock on wood, not trying to jinx myself). Happy Thursday!
